Chewy Cheese Popovers


This recipe is quite basic, you can add herbs, spices or any other else to tase …it’s your choice….
me…I just like the way it is…plain and cheesy…

How i love about this popovers is they are very chewy at the inside with little crust on the outside…
eat this and watch TV, 30 minutes gone then you realized that the popovers are gone too….

***Chewy Cheese PopOvers***

1 egg
80ml olive oil / vegetable oil
160ml milk
170gr tapioca flour
70gr grated cheese, your preference, I like to put cheddar and feta cheese, as i need the bitter taste of feta cheese…
1tsp salt

How to:
*Preheat oven to 400°F. Grease a mini-muffin tin.
*Put all of the ingredients into a blender and pulse until smooth, mine take about 3-4 minutes in blender.
>>>You may need to use a spatula to scrape down the sides of the blender so that everything gets blended well. At this point you can store the batter in the refrigerator for up to a week.
*fill in the tins with batter until 3/4 part of tins.
*Bake in the oven for 15-20 minutes, until all puffy and just lightly browned. Remove from oven and let cool on a rack for a few minutes.
*Eat while warm or save to reheat later.
