***Steamed Chicken with Scallion and Ginger***

4 Chicken Wings devided by 2 + 5 chicken breast small cut, bone-in or out

1 medium peeled and minced ginger
1/4 cup trimmed scallions, white and green parts combined, chopped into 1/4 inch pieces
Salt to taste
2 tablespoons good soy sauce
1 teaspoon sesame oil

Dipping Sauce:
2 scallion, minced
1 tablespoon ginger, minced
1 tablespoon ginger, grated (a Microplane is perfect for this)
1 teaspoon salt
½ cup vegetable oil

1. Marinade chicken for about 30 minutes – 1 hour or longer
2. Steam the chicken for 30 minutes. The chicken is done when white and firm to the touch; cut into a piece if you want to be certain. When the chicken is done, drizzle it with the soy sauce and sesame oil and serve
3. Prepare the dipping sauce by heating the vegetable oil just until it starts to smoke. Pour it over the scallion, ginger, and salt, and mix together. Serve with the chicken immediately.
