Fruit White Chocolate Shortbread

Hello Friday..
This is one of Kia’s fave, I’m not often made this as Kia so like this and cannot stop form eating…hehehe..
The cake is so yumm…simple as that…

here is the recipe

Fruit White Chocolate Shortbread
makes 12 wedges from 18cm round baking /pie pan.

120gr plain flour – i use all purpose
30g cornstarch
1/4 tsp salt
120gr vegan butter
75gr icing sugar
1/2 tsp vanila powder – i use L’arome
1/2 tsp vanilla paste
1/4 tsp almond essence
50g dried fruit – i use raisin, sukade
50g vegan white chocolate

Line the bottom of a 18cmround cake tin with baking paper.

Mix together the flour, cornstarch, vanila powder and salt. Set aside.

In a large bowl beat the butter with the icing sugar and almons essence and vanilla paste until very creamy. Stir in the flour until all combined then fold in the dried fruit and white chocolate.

Spoon it into the prepared pan/s and with well floured hands press the mixture evenly into the prepared tins. Prick all over with a floured fork

Bake for between 45minutes in the oven with temprature 150C

Let cool in the tin on a wire rack for 30 minutes then remove and slice while warm. I used a serrated knife here as I found it easiest.
