Italian Herbs Knots Bread 2

soooo i making bread once i arrived from office
and today not such a GREAT day for me…
need some “punching dough” ritual to keep the stress away…heheheh

This knot bread is so simple, so tasty,,,
here i used cheese and italian herbs for the topping, but you can change with almost everything, with garlic, with pizza sauce..anything…

For the dough, this time i used otentic dolce not the instant yeast…it makes smoother dough and easy to work with, and the end result of the bread is so fluffy…
the proofing time is shorter then if used instant yeast…well at least it save my time a little bit…

::Knot Bread with Itallian Herbs and Cheese::

Bahan
250gr Bread Flour (I Used HIME)
50gr Sugar
40gr butter
20gr Puratos Otentic Dolce
1 egg yolk
2tbsp Italian Herbs
40gr grated cheese
200ml milk – room temprature
1/2tsp salt

Topping:
3tbsp butter
1tsp italian herbs
grated cheese

Cara:
*Mixed Flour, Sugar, Otentic Dolce, Italian Herbs and grated cheese with wooden spoon until even
*add egg yolk, butter and 150ml milk, mixed together with your hands until combine and form like dough..you can add milk if you feel the dough to dense until reach the perfect dough texture
*transfer the dough on oiled based and start knead, I also oiled my hand.
*Knead about 5 minutes until smooth and add the salt, continue to knead
*about another 5-8 minutes then you should get smooth and elastic dough

*round the dough and transfer to clean bowl, cover with clingwrap plastic and let the dough rise until it has doubled in size, which should take about 30 minutes in a warm kitchen.
*Lightly oiled your hand, punch the dough and transfer to the oiled based, and divide the dough into 20 pieces.
*Roll each piece of dough into a long rope about 5-6 inches long, then tie it into a knot.

*Once you have tied up all the dough, arrange each knot on the greased pan and cover with palstic wrap. Let the dough rise for about 30 minutes, until doubled in size and puffy.
*Preheat the oven to 190C , and prep topping. Brush the knots with butter and put the cheese on top.
*bake for 12-15 minutes or until golden brown on top
*take them out off the oven and brush once again with the butter.
